Osso Buco is traditionally made from veal shank but beef shank is used as a substitute. Cut from the hind leg it includes the bone with marrow in the center. The cut is prized for its rich flavor and suitability for slow braising, which makes the meat tender and allows the marrow to melt into the sauce.
