Sunday Dinner Chicken (great for weeknights too!)

Ingredients
- (1) Pastured Whole Chicken (Jumbo)
- ((to taste)) Salt & pepper
- (1-2 tsps) Paprika
- (1) Lemon
- (2-3 sprigs) Lemon Thyme (fresh or dried)
- ((optional)) 2-3 pats butter
Directions
Unthaw the whole chicken (you can also use a small, medium, or large sized bird). There is no need to wash or rinse your chicken. Place the chicken, breast side up in your crockpot. Salt and pepper generously and sprinkle paprika all over the skin (you can rub it into the skin if you have the time...this is meant to be a hassle free recipe- so you choose!). You may also add a few pats of butter under the breast skin at this time if you so desire (totally optional). Slice the lemon very thin and squeeze some of the juice over the chicken. Twist each piece that you have cut and garnish the chicken with the lemon slices as well as the sprigs of thyme. Set your slow cooker on low heat and let the chicken cook for roughly 4-6 hours, depending on the size you choose. When ready to serve, remove bird and place breast side up on a cast iron pan or cookie sheet and broil for 4-5 minutes on high to crisp the skin. Enjoy!
