Turkey Brine

Ingredients
- (1) Pastured Turkey (large)
- (1 1/2 cups) Redmond Salt
- (3-4 cups) Apple Cider
- (handful) Peppercorns
- (fresh sprigs or 4 T dry) Rosemary
- (5 cloves, minced) Garlic
- (Peels of 3 large) Oranges
- (2 cups) Brown or Maple sugar
- (2 gallons) Water
Directions
Combine all ingredients together in a large stock pot and heat until sugar and salt are dissolved. Cool completely and then pour over your turkey. Use a clean, 5 gallon bucket or cooler. Place in the fridge or a cool place for 16-24 hours. You'll be ready to cook from there after removing from the brine.
