Spicy Honey Smash Tacos
Yummy smash tacos using our ground chicken paired with a honey slaw

Ingredients

  • (12-14) Corn tortillas
  • (1 T) Taco Seasoning
  • (2 T) Chili Powder
  • (1 T) Tajin
  • (2 T) Paprika
  • (1 T) Garlic Powder
  • (1 T) Onion Powder
  • (1 tsp) Redmond Salt
  • (1 tsp) Black Pepper
  • (1 cup) Panko Crumbs
  • (use our tallow stick! (just enough to cover your griddle)) Beef Tallow (rendered)
  • (2 lbs (Can also use our GROUND TURKEY)) Ground Chicken
  • (2 T (I made it myself from our eggs)) Mayo
  • (1 T) Raw Honey, 24 oz
  • (2 cups, finely sliced) Cabbage
  • (1 (finely shredded) available in our Farm Store) Carrot
  • (1/4 cup, finely chopped) Cilantro
  • (1 cup, chopped or can be chips) Dill pickles
  • (To drip or drizzle) Sour cream or dressing of your choice
  • (1 T) Apple Cider Vinegar
  • (8 oz (or more if you love cheese), Sharp White) Hard Cheese

Directions

Mix together all of the dry seasonings.  Reserve 2 tablespoons out and mix with the panko crumbs on a plate.  The rest of the seasoning can be stirred directly into the ground chicken or turkey until well combined.  Next, heat up your grill (if you want extra crunchy you can fry in a layer of oil) I opted for just lightly covering my griddle with tallow.  Take a corn tortillas and spread a good amount of the ground meat mixture onto it, then dip it directly in the panko crumbs.  Cook on both sides until meat is done and tortillas are as crispy as you'd like.  Repeat for all your tacos.  For the slaw, make a sauce of the mayo, honey, and acv.  Combine the cabbage, carrots, and cilantro, and mix the sauce into it.  Once the tacos are done cooking, serve warm and top with the slaw, dill pickles, cheese (shredded), and dressing to your taste.  These are so good, enjoy!
